Bacon, eggs, mushrooms & thick sliced toast anniversary breakfast!
Today is a special day in our home. It's my hubby and my anniversary! - YAY
Whilst traditional gifting isn't a big thing in our relationship, a yummy meal with our 7 children is a gift we always cherish, sitting down, acknowledging our relationship and being thankful for the family we have together.
So, we are recipe hunters ans gathers and creators. This recipe I am going to share with you is the result of me shopping yesterday, looking for ingredients we love that I can cook for our special breakfast this morning.
We are a big family, so we mostly cook like an army barracks, it is simple enough to adapt this for the mouths you need to feed.
Simple in its making and preparing, and delicious for a special occasion.

Ingredients
- BAKERY; 2 loaves of uncut toast- slice to your desired thickness
- PRODUCE; 500grams mushrooms- washed, and chopped in quaters
- FRIDGE; 1 doz eggs
- 1 kg bacon
- Butter 2Tsp for mushrooms and as needed for toast
- OPTIONAL- slices of avocado are a very yummy addition on top of this- they are currently not in season here.
Instructions
- Preheat oven to 100C and place baking tray in oven to keep warm
- Slice bread to your desired width,* continually toast the bread whilst frying all ingredients- enough bread to cater to all you are feeding
- In a fry-pan on med heat (no oil needed), fry your bacon to your liking** TIP below
- Whilst bacon is cooking, prepare mushrooms ready for cooking.
- Crack the eggs into a bowl where they will all fit***
- As bacon is cooked to your liking, place in baking tray in the oven to maintain heat whilst preparing eggs and mushrooms.
- Reduce heat of largest pan to low- leaving in the remnants from cooking the bacon- allow them to slowly cook to your liking.
- In the smaller fry-pan, adjust heat to high, add the butter designated for mushrooms and fry well.
- Plate the bacon onto buttered toast, layer on top the eggs- place mushrooms beside (difficult to get them to balance on top of the pile.
- To finish, grind some sea salt and cracked black pepper over eggs
- Enjoy!
- *for this recipe, I cut quite thick slices
- **I use 2 pans to cut down cooking times AND for added flavor for eggs and mushrooms
- TIP- you know the 1st side of your bacon is cooked enough when it easily lifts from the pan- if still sticking, leave for another minute or so.
- *** this makes cooking them easier. Because when you pour them into the then low heat fry-pan, they will all space themselves perfectly, unlike times where cracking them into the pan one at a time can have the yolks get a little too friendly (close together)
